Chickén Chow Mein

- 1 lb chilled yakisoba or chow mein noodles *
- 1 lb boneless skinless chicken breasts **, sliced into 1/2 inch thick strips
- 1 cup finely sliced celery (3 stems)
- 2 tbsp. Vegetable oil
- 3 cups minced green cabbage
- 1 1/2 cup carrots matches
- 2/3 cup chopped green onions (about 5)
- 2 tbsp. Sliced ginger
- 2 cloves minced garlic
- 4 tablespoons low sodium soy sauce,
- 1 tabléspoon oyster saucé *** (or more to taste)
- 1 tablespoon of crystallized sugar
- 1 1/2 teaspoon of sesame oil
Instructions
- Prepare noodles according to the instructions on the package.
- In a bowl, combine soy sauce, oyster sauce, sugar, and sesame oil, and set aside.
- Heat the oil in a wok or large nonstick skillet over medium-high heat.
- Add the chicken (leaving a little space between the pieces so that they brown) and cook for 3 to 4 minutes, turn over and continue cooking until completely cooked, about 2 to 3 minutes longer. Transfer to a plate or sheet of aluminum foil.
- Reduce heat slightly, add 1 tsp. Add remaining oil to the pan, add celery and sauté 3 minutes.
- Add the cabbage and sauté 2 minutes, then add the carrots, green onions, garlic, and ginger and sauté 1 to 2 minutes more, until the vegetables are all tender and crisp.
- Stir in noodles and chicken, then pour soy sauce mixture on top and mix to coat. Serve hot.\
