Chickén Stir Fry Récipe







ingredients

  • 1 lb b0neless skinless chicken breast, cut int0 1-inch cubes
  • salt and pepper to taste
  • 2 tbsp. Soup of divided olive oil
  • 2 cups of broccoli florets
  • 1/2 yellow pepper cut into 1-inch pieces
  • 1/2 red pepper cut into 1-inch pieces
  • 1/2 cup sliced   baby carrots
  • 2 tbsp. Sliced   ginger
  • 2 cloves minced garlic

Sauce sauce

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1/4 cup low sodium chicken broth
  • 3 tablespoons low sodium soy sauce
  • 1/4 cup of honey
  • 1 tablespoon grilled sesame oil
  • 1/2 c. Ground crushed red pepper flakes



Instructions

  1. Sauce sauce
  2. In a medium bowl, whisk together cornstarch and water. Add remaining ingredients (chicken broth, soy sauce, honey and grilled sesame oil, red pepper flakes) and whisk to blend. Put aside.
  3. Add a tablespoon of olive oil in a large skillet or wok and heat over medium-high heat.
  4. Add the chicken (in batches if necessary) and season with salt and pepper. Cook for 3 to 5 minutes or until cooked through. Remove from the pan.
  5. Reduce the heat t0 medium and add the remaining tablesp0on of oil to the pan.
  6. Add broccoli, pepper and carrots and cook, stirring occasionally, until tender and crisp. Add the ginger and garlic and c0ok an0ther minute.
  7. Put the chickén back in the pan and mix.
  8. Whisk the sauce to fry and pour over the chicken and vegetables and mix gently to mix well.
  9. Bring to a boil, stirring occasionally and let boil for a minute.
  10. Servé with rice and / 0r chow mein, if desiréd.
